Vegetarian/ Vegan Lunch Bowl 

Are you starving but feeling too exhaustive to cook anything, I have a quick fix to your hunger~ THE VEGAN BOWL; also popularly known as ‘Buddha Bowl’

All you need as a main ingredient is some left over rice

  • Hot Tomato Salsa
  • Some red beans or chickpeas (canned washed and drained )
  • Chopped Lettuce
  • Chopped Romaine tomatoes
  • Chopped red onions
  • Stir Fried Tofu/ crumbled vegetarian protein/cottage cheese ( paneer)
  • Sour cream (preferably vegan)
  • Sliced avocado
  • Chopped chives/ green onions
  • Sriracha  to taste

Combine rice with half tbsp of salsa and Fill the bowl with same rice half way through, followed by beans/ chickpeas, onions, tomatoes, avocados, tofu , lettuce,  a bit of a sour cream( optional ) and top it off with chives and Sriracha. Your Happy Vegan bowl  is ready to serve !! Hope you enjoy !!
